This recipe is a twist on the traditional Caesar dressing, yet still has all the typical flavors & decadence you love & expect. When it comes to anchovies, the amount added here imparts that classic Caesar taste with none of the “fishiness.” It’s loaded with good-for-you fats and is easy to make. Simply soak the nuts before bed or work, add it all into a blender and you’re good to go. If you have a high-speed blender such as Vitamix, you could get away without soaking the nuts. Makes 1 ¾ – 2 cups dressing
Preparation Time: 4 hours to soak, 5 minutes to make
1 cup raw cashews, soaked
¾ cup purified water, plus more to thin as needed
3 anchovies packed in olive oil
4 small to medium garlic cloves
4 tablespoons fresh squeezed lemon juice
1 tablespoon stone ground mustard
½ plus 1/8 teaspoon sea salt, plus more to taste
1 tablespoon nutritional yeast or Parmesan cheese
Add cashews and water to a blender and blend on high until fully smooth and emulsified. Add the anchovies, garlic, lemon, mustard and salt and blend for a few minutes to incorporate. If you can have dairy, definitely use real Parmesan cheese instead of nutritional yeast. Recipe keeps for 5 days refrigerated. Enjoy!
